Opalys is a creamy chocolate that's light and pure in colour with very low sweetness. It opens with balanced flavours of fresh milk and natural vanilla.

Valrhona devised Opalys to meet the needs of a customer who wanted a chocolate with an immaculate colour. Developing such a bright white product was technically highly demanding and required Valrhona to modify its facilities. This led to the creation of Opalys, a creamy, pure white chocolate, with only the slightest hint of sweetness. Prized by perfectionists, it became a phenomenal success. The name Opalys refers to its opalescent white colour.

What makes Opalys so special is its perfect balance of cocoa butter, sugar and milk. Obtaining this white colour and this level of finesse at the same time is extremely difficult.

Opalys is a white chocolate with the merest hint of sweetness whose delicate milky, vanilla flavour conjures up all the purity of a shimmering mountaintop snow shower in spring.

Summer Shipping: 

At above 26°C, cocoa butter in chocolate products may start melting, and recrystallize as white streaks or marks on the chocolate's surface.  This phenomenon is called 'fat bloom'.  While it may not have the perfect appearance, bloomed chocolates are safe to eat and use in recipes.

During summer months when the temperature is relatively warm, we advise adding cold packaging to your shipment in order to minimize the risk of melting.  While we are careful and diligent in maintaining the temperature of your package, we unfortunately cannot guarantee the products in the cold packaging will not be affected by unusually warm weather and irregular transit time.

Perfect sweetness...

This while chocolate has just the right sweetness and an excellent mouth-feel. It pairs well with other flavours (I used matcha and roasted sesame, they were both excellent!).

My favourite

I love opalys. It is not very sweet, tastes like milk and has a vanilla hint. It’s the ultimate balanced. I prefer it over Ivoire, but again it depends how to pair it with. Definitely my favourite to use for couverture or in ganaches.

I already knew almost all imported stuff here before coming to Canada. The reason I’d like put five stars on this is the store staffs are always so generous and super kind and nice. If you have any questions the chef answers through emails!!! I’m looking forward to signing for classes soon
