This Matfer Bourgeat 8" x 3" stainless steel lid is designed for use with the Exoglass cake pan with fillable middle (sold separately). It easily slides over the top of the compatible pan to provide the perfect cover and perform a number of useful functions to control the baking process.
By slightly constraining the shape of baking cakes or loaves and trapping moisture, it prevents the formation of a crown and perfectly produces the classic, slightly tapered shape of the Exoglass pan. The lid's durable steel construction ensures longevity and offers exceptional heat resistance to temperatures up to 482 degrees Fahrenheit.
