Cannelé (or cannelé de Bordeaux) is a small French pastry with a soft, tender custard centre and a dark, thick caramelized crust. A specialty of the Bordeaux region, it’s now widely enjoyed in pâtisseries across France and beyond. Its signature shape is a small, striated cylinder, often around 5 cm in height depending on mould size and recipe.

Copper is prized for its heat conductivity and responsiveness. For cannelés, that matters because consistent heat helps create the signature dark crust while keeping the inside tender rather than dry.
The tinned interior is a traditional finish for copper pastry moulds. It protects the copper and supports better handling and release as the mould is properly seasoned and maintained.
Care & use
Hand-wash only and dry immediately. Avoid soaking and dishwashers. Do not use abrasive pads or harsh scrapers on the tin lining. Store dry. With regular use, seasoned moulds typically release more easily; if tin wears after years of baking, re-tinning can help keep the mould in service.
