Cannelé (or cannelé de Bordeaux) is a small French pastry with a soft, tender custard centre and a dark, thick caramelized crust. Originally from the Bordeaux region, it’s now a familiar sight in pâtisseries across France and beyond. The pastry is known for its fluted, striated cylinder shape — often around 5 cm in height depending on mould size and recipe.
These moulds are made by Matfer, the renowned French kitchenware manufacturer crafting professional tools since 1814.
Why choose Large (5.5 cm)?
This Large 5.5 cm mould is made for a more generous, café-style presentation — bigger on the plate with a bold look and a thicker crust-to-custard contrast. If you sell pastries, plate desserts, or simply prefer a more substantial portion, Large is the size to choose.
Why copper (and why tin-lined)?
Copper is a go-to material for professional pastry work because it transfers heat quickly and evenly. That responsiveness helps drive the caramelization that cannelés are famous for, while still supporting a tender interior.
The tinned interior is a traditional lining used in copper moulds. It helps protect the copper and, when properly seasoned and cared for, supports consistent release and results batch after batch.
Care & use
Hand-wash only. Dry immediately. Avoid soaking and dishwashers. Do not use abrasive scrubbers or metal scouring pads on tin. Store dry. Copper moulds can last for years with proper care; if the tin lining wears over time, re-tinning is a common way to extend longevity.
