Cannelé (or cannelé de Bordeaux) is a small French pastry with a soft, tender custard centre and a dark, thick caramelized crust. A specialty of the Bordeaux region, it’s now enjoyed in pâtisseries across France and beyond. It takes the shape of a small, striated cylinder, often around 5 cm in height depending on the mould and recipe.

Why copper (and why tin-lined)?
Copper is used by many professional chefs because it heats quickly and evenly, which helps develop the cannelé’s signature caramelized crust. Compared to many other materials, copper is especially responsive — useful when you’re aiming for consistent browning across a full tray.
The tinned interior is the traditional lining used in classic copper moulds. It helps protect the copper and, once properly seasoned and cared for, supports easier release while keeping the inside soft and tender.
Care & use
Hand-wash only. Dry immediately after cleaning. Avoid soaking, dishwashers, and abrasive scrubbers (tin is softer and can scratch). Store dry. With good care, copper moulds can last for years; if the tin lining wears over time, re-tinning can extend the mould’s life.
