Dried glucose syrup is a white powder made by drying out a purified liquid with sugars from starch. You can add it to ice cream or dessert mixes instead of some sugar.
It's also handy for making fruit jellies and treats like nougat. Plus, it stops sugar from crystallizing, making desserts smoother, and helps cut down on sugar.
Suggested dosage:
- Pulled sugar: 350 g of glucose for 1 kg of sugar
- Ice cream and sorbets: 100 g of glucose for 1 liter of milk or 1 kg of fruit
- Nougatine: 500 g of glucose for 1 kg of sugar
