Fresh yeast, also known as compressed yeast or cake yeast, is a classic baker’s yeast made from living Saccharomyces cerevisiae. Its moist, crumbly texture and active fresh format make it a favourite among bakers who enjoy a more traditional, hands-on baking process. Fresh yeast is prized for the richer, more nuanced flavour and aroma it can bring to breads, pastries, and fermented doughs, making it a distinctive choice for bakers who value both process and flavour.

What makes it different
Fresh yeast offers a different workflow from instant dry yeast. It must be kept refrigerated and used within a shorter period, but many bakers choose it for its fresh compressed format, traditional bakery feel, and the deeper flavour character they want in finished baked goods.
Why bakers choose it
Bakers often reach for fresh yeast when they want a more traditional bakery-style process and a dough with a fuller, more expressive yeast character. It is widely used across breads, pizza, pastries, and preferments, and appeals to those who prefer the feel of working with fresh compressed yeast rather than dry granules. Compressed yeast is also commonly used in both small and high-speed bakeries, which supports its credibility as a professional baking format.
