Try this in your sourdough!

Diastatic malt is a very useful addition (in very small amounts -- 0.25% to 1% of the weight of the flour) to sourdough. It improves the crust and the rise. It is difficult to find a made-in-Canada source, and this one is also reasonably priced. Thanks, Gusta!
