Shiro-an (白あん / 춘설 백앙금) is a traditional sweetened white bean paste widely used in Japanese wagashi and Korean desserts. Made from carefully cooked and mashed white kidney beans (such as Otebo beans), it has a light colour and mild flavour, making it a versatile base for both sweet and decorative applications.
Unlike red bean paste (anko), Shiro-an allows other flavours—such as matcha, yuzu, or fruit purées—to shine when blended. Its neutral tone also makes it the ideal choice for bean paste flower piping, nerikiri, and other intricate confectionery work.

Storage Instructions:
After opening or repacking, store in an airtight container in the refrigerator. For longer-term use, the paste can be frozen and thawed gently in the microwave or at room temperature before use.
