High-protein, multipurpose wheat gluten for baking and plant-based cooking
Bob’s Red Mill Vital Wheat Gluten is a high-quality protein powder derived from the endosperm of the wheat berry, containing 75%–80% protein. When hydrated, it becomes highly elastic, giving bread dough the structure and chew associated with professional baking results.
Add a small amount to yeast-based recipes to improve elasticity, dough rise, and final volume.
