Handmade in Japan by skilled artisans, this traditional wooden-frame uragoshi sieve is designed for the exceptionally fine straining required in wagashi preparation. Its 60-mesh screen helps refine bean pastes, fillings and purées by removing skins, fibres and small lumps, creating a smooth, delicate finished texture.
The broad wooden frame provides a stable working surface for pressing ingredients across the screen with a spatula or scraper. Particularly well suited to koshian and other fine wagashi fillings, it can also be used for chestnut paste, sweet potato paste, smooth fruit and vegetable purées, and other pastry or confectionery preparations where texture is important.
Unlike a mass-produced metal sieve, each piece is individually handmade using traditional Japanese wooden-frame construction. Subtle variations in the wood and finish are natural characteristics of the artisan-making process and make each sieve unique.
