This 100% natural Yuzu Zest Powder from Shiromi, Miyazaki, Japan, reflects local farmers' commitment to producing safe and delicious yuzu fruits through traditional and honest practices, honouring their connection to the land and their community.

The Shiromi area is located in the Kyushu Mountains, with many steep mountains and numerous valleys with flowing water. As a result, river mist and fog are likely to occur, and because there is always air current flowing above, the humidity remains stable without stagnation. The lowest temperature in winter is around -8℃. The terrain, where there is a large difference in temperature between day and night, allows for the cultivation of high-quality yuzu. Yuzu that has undergone this temperature difference during the larval stage will have a slightly flattened shape. Shiromi's yuzu has a reputation for being flat and fragrant. Yuzu is originally a plant with strong vitality.

In Shiromi, the farmers prioritize understanding and supporting the needs of the yuzu trees. They believe in the inherent vitality of these trees and adopt practices such as no pesticide use, avoiding excessive fertilization to prevent vicious insect attraction, and maintaining weeds around the trees to conserve water.

There is also a dedicated effort to produce yuzu while respecting the tree's feelings, adhering to natural laws, and prioritizing land conservation to ensure the production of healthy and delicious yuzu. The yuzu harvested in Shiromi is carefully processed to preserve its flavour and aroma, offering users the opportunity to experience its exquisite taste.

Yuzu is in season from late autumn to early winter. Fruits harvested during this period have a good aroma and a rich amount of juice. A good yuzu has rough, shiny skin and is free from blemishes. There are two types of yuzu: green yuzu and yellow yuzu, but this is not a difference in quality, but rather due to the time of harvest. The immature yuzu from August to September is called green yuzu, and the one that changes colour in late autumn is called yellow yuzu. It seems that many people enjoy yuzu for its unique aroma and flavour rather than eating it.

The pulp of yuzu has a strong sour taste, so it is not suitable for eating raw. However, after being exposed to frost several times in late December, the sourness of the yuzu becomes mellow and can be eaten as is. The unique aromatic element is contained in the oil sacs of the epidermis. The nutritional value of the peel is higher than the pulp, and the content of vitamin C is among the highest among citrus fruits. It also contains vitamins B1 and B2, iron, potassium, and calcium.
