Valrhona Jivara 40% is a milk chocolate with unusual depth and poise. It opens with creamy chocolate notes, then unfolds into gentle vanilla and malt, giving it a profile that feels warm, mellow, and distinctly cocoa-rich rather than simply sweet. The finish is smooth and rounded, with a softness that never loses definition.
Created in 1995 and crafted in France, Jivara changed expectations of what milk chocolate could be. It was the first Valrhona milk chocolate to bring this much cocoa character to the category, built from a subtle blend of aromatic cocoa profiles typical of Ecuador and Ghana. That blend gives Jivara its signature balance of creaminess and real chocolate intensity, which is part of why it has remained such a staple in pastry kitchens.
Jivara is especially compelling in cream mix and ganache, where its cocoa-rich, malty profile can unfold with both softness and structure, but it also performs beautifully in coating, moulding, bars, mousse, and frozen desserts. It pairs especially well with praliné, red fruits, yellow fruits, tonka bean, and salted butter caramel.
