Its story is part of what makes it so distinctive. Itakuja was created in Brazil through a friendship between Valrhona sourcer Benjamin Figarède and plantation director M. Libânio, then shaped through Valrhona’s double-fermentation technique, where passion fruit is added after the first cocoa fermentation to build a second layer of aroma. The name itself links place and flavour, drawing from Itacaré and the Tupi word for passion fruit, and giving the chocolate a sense of origin that feels inseparable from its taste.
Itakuja is especially compelling in bars and moulding, where its aromatic brightness and cocoa-rich depth can come through cleanly. Banana is its most natural pairing, while mango, pecan, pistachio, coconut milk, and dark rum all bring out different sides of its tropical, fruit-forward character.
