Valrhona Bahibé 46% is a milk chocolate with more cocoa presence than most. It opens with a rich chocolate note and soft cereal warmth, then finishes with hints of ripe fruit and a faint bitter edge that keep it feeling balanced rather than overly sweet. Smooth and enveloping on the palate, it sits closer to dark chocolate in character than a typical milk couverture, while still keeping its milky softness.

That stronger profile is central to Bahibé’s appeal. With an unusually high 46% cocoa content for a milk chocolate, it was developed to bring more intensity, depth, and structure to the category without losing the roundness that makes milk chocolate so approachable. Made with cocoa beans from Duarte province in the Dominican Republic, it offers a more cocoa-driven expression that feels fuller and more origin-led than standard milk couvertures.

Bahibé is especially strong in mousse, where its cocoa-rich, gently fruity profile can come through with clarity, but it also performs beautifully in coating, moulding, bars, cream mix, ganache, and frozen desserts.
