Katakuriko (片栗粉) is the Japanese term for potato starch, and this variety is made exclusively from 100% Hokkaido-grown potatoes. Known for its purity and smooth texture, this starch offers excellent thickening and coating properties with a clean, neutral flavour.
Hokkaido, Japan’s northernmost island, is famous for its cool climate, mineral-rich volcanic soil, and wide potato fields. These growing conditions contribute to a starch that is notably finer and lighter than most Western potato starches. The result is a soft powder that dissolves easily and yields a clear, glossy finish without cloudiness or clumping.
