After you portion your dough, you gently roll each piece across the grooved beechwood surface to imprint the classic ridges — fast, consistent, and highly controlled.

Those ridges aren’t just for looks. They increase surface area, creating sauce-clinging ridges that hold butter-and-sage, pesto, ragù, or creamy sauces far better than smooth dumplings. Quick How-To (Chef Method)

  1. Roll dough into a rope and cut into small pillows.
  2. Lightly flour the board.
  3. Place one piece on the grooves and roll with gentle pressure (or press with your thumb) to form ridges.
  4. Boil until they float; finish in sauce so the ridges grab and glaze.
