NItten Hokkaido Dry Yeast “Tokachi Wild Yeast” is a Japanese instant dry yeast made in Hokkaido from a naturally occurring wild yeast strain born in Tokachi 十勝. The yeast was isolated from the fruit of the Ezo-yamazakura, a wild cherry tree native to northern Japan.

This yeast is especially well suited for sweet and enriched doughs, where sugar, dairy, eggs, and fats can slow fermentation. It is a great choice for Japanese-style sweet buns, milk bread, soft rolls, enriched loaves, and other bakery items where you want reliable rise with a gentle, mild aroma.

Unlike yeasts designed mainly for lean breads, Tokachi Wild Yeast is a versatile option for bakers who frequently make softer, sweeter, richer breads. The finished bread has a clean, pleasant flavour profile that lets butter, milk, wheat, and fillings come through without an overly yeasty taste.
