Sosa Maltosec is a tapioca maltodextrin designed to absorb fats and oils, transforming them into a fine, easy-to-handle powder. It is used by pastry chefs, chocolatiers and modern cuisine professionals to create powdered fats, edible sands, crumbly textures, nut crunches and decorative finishing elements.

With its strong fat absorption capacity, Maltosec is especially useful for working with fatty ingredients such as chocolate, praline paste, nut pastes, sesame paste, flavoured oils, brown butter and other fat-rich preparations. It helps create dry, spoonable or sprinkleable textures while carrying the flavour of the original ingredient.

Use & Application

Use Maltosec to create powders, sands, rocks, polvorones-style textures, crunchy nut preparations and other modern pastry or savoury applications.

It can be used with a wide range of fatty ingredients, including:

Maltosec may also be used for its agglomerating or binding effect when dissolved in a small amount of hot or cold aqueous liquid and combined with solids before drying or baking.

How to Use

To make a fat powder, gradually mix Maltosec into the fat-based ingredient using a whisk, spatula or food processor until the desired texture is reached. Add in stages and mix thoroughly, as the final ratio will depend on the fat content of the ingredient and whether you want a soft crumble, coarse sand or fine powder.

For agglomerating applications, dissolve Maltosec in a low proportion of hot or cold aqueous liquid, combine with the solids to be bound, then dry or bake as required.

Recommended Dosage

Use quantum satis, adjusting as needed according to the preparation and desired texture.

Start with a small amount and gradually increase until the fat is absorbed and the mixture reaches the desired powder, sand or crumble consistency.

Store in a cool, dry place between 15°C and 25°C, with humidity below 60%. Keep protected from light and odours. Close tightly after opening.
