How to get cleaner scores (quick tips)

For the best results, score when your dough surface is slightly dry to the touch. If your dough is high-hydration, a short chill (even 10–20 minutes) can help firm it up. Dust the loaf lightly with flour to reduce dragging, then score at a shallow angle with one decisive stroke — avoid “sawing” back and forth.

Baguettes: 4–5 overlapping cuts along the length

Boules/bâtards: one long slash or a simple cross for controlled opening

Which one should I buy?

If you want the simplest option with safer handling, choose 120025. If you primarily score baguettes and want a longer tool with a stainless steel blade feel, consider the Matfer 120006 (6") double-edged model.

This is actually a question. Is it for straight cuts? Do I need to insert a razor blade? Or do I just cut without the blade? Perhaps the top is the blade itself? Thanks!

Hello CG! Thank you for the question! This is an innovative product by Matfer where the sharp plastic top is used to cut, straight or curve depending on which side you hold. The sharp plastic top is designed such that it's safer to handle by bare hands. Happy baking!
