Blue Star® Mochiko Sweet Rice Flour by Koda Farms is a premium, gluten-free flour made from 100% California-grown short-grain sweet rice. Milled on the Koda family farm since the 1940s, this flour is prized for its purity—free from additives, preservatives, or blends.

What sets Mochiko apart is its exceptionally high amylopectin content, a starch component that makes it naturally sticky and ideal for creating chewy textures. This makes it a superior choice for both traditional and modern gluten-free recipes, as well as a highly effective thickening agent.

Mild in flavour and finely milled, Mochiko is the flour of choice for Japanese desserts like homemade microwave mochi, chi-chi-dango, manju, and rice crackers (arare). Its neutral taste also makes it suitable for fusion applications in baking or sauces that require smooth consistency.
