Created in 1986 and crafted in France, Guanaja remains one of Valrhona’s most iconic dark chocolates. Built from a subtle blend of aromatic cocoa profiles typical of Trinidad, the Dominican Republic, Jamaica, Ghana, Côte d’Ivoire, and Madagascar, it became a benchmark almost immediately. Its name is a nod to the Caribbean island of Guanaja, where Christopher Columbus was first given cocoa beans in 1502, giving the chocolate a story that feels as layered as its flavour.
Guanaja is especially compelling in ice creams and sorbets, where its bittersweet profile can come through with intensity and finesse, but it also performs beautifully in coating, moulding, bars, crémeux, ganache, and mousse.
