Alpaco’s story is rooted in Ecuador and in Valrhona’s desire to reveal what its cocoa could express on its own. Created as Valrhona’s first single origin from Ecuador, it was developed around the Arriba, or Nacional, variety, chosen for its fine aromatic character. The name comes from “Alpa,” meaning “plain” in Quechua, and that sense of place carries through in a chocolate shaped by Ecuador’s terroirs, local expertise, and careful short fermentation designed to preserve its aromatic nuance.
Alpaco performs beautifully across coating, moulding, bars, mousse, cream mix, ganache, and frozen desserts, where its sweet spice, floral lift, and woody depth can add structure without overwhelming the dessert.
