Nitten Hokkaido Dry Yeast “Tokachi Wild Yeast” is a Japanese instant dry yeast made in Tokachi (十勝), Hokkaido from a wild yeast strain isolated from the fruit of Ezo-yamazakura, a wild cherry tree native to northern Japan.

It is known for its gentle, mild aroma and works especially well with softer, sweeter, and richer breads. It helps create a clean, pleasant flavour profile that lets butter, milk, wheat, and fillings come through without an overly yeasty taste. Because it is an instant type, it can be added directly to dough without preliminary fermentation.
