SOSA Soy Lecithin is a plant-based emulsifier derived from soy, used to promote the stable blending of fats and water in food formulations. It also functions as an anti-freezing agent, natural antioxidant, and flavour stabilizer, making it a versatile ingredient across both sweet and savoury applications.

Soy lecithin is especially valued for its ability to prevent crystallization and over-freezing in frozen desserts like ice creams and sorbets, while enhancing texture and shelf life in baked goods and confections.

Use & Preparation

  • Disperse in cold liquid and whisk or aerate to incorporate

  • Best suited for fat-based or emulsified systems

  • Avoid using with high-alcohol or highly aromatic infusions

Applications

  • Mousses and whipped desserts
