An ingenious addition to the ICHIKA wagashi tools collection, this engraved stand lays the foundation and brings elevation to your creative processes.
This stand is useful for shaping large wagashi pieces such as the scissors-cut or needle-cut chrysanthemums when fully assembled, but its centre piece can be used alone for shaping regular-sized ones as well. It lets you craft intricate designs with ease even when they need to be held in the hand for lengthy durations. Without the transfer of body heat as you do not touch the wagashi directly, this holder is ideal for protecting the wagashi from sagging or drying out.
There are markers along the edge indicating 1/8, 1/5, and 1/3 of a circle. Besides equal division guide for making chrysanthemums, you can also use the fifths as a guide for bellflowers and cherry blossoms, and the thirds for three or six equal divisions.
The round frame, which is separated into inner and outer parts, each has a 30° angled edge, making them innovative tools themselves for adding contours and creating new designs!
Wagashi -- traditional Japanese sweets -- capture seasonality and imagery of nature in their aesthetics. They are served before the bowl of matcha that concludes even the most elaborate kaiseki meal. The specialty wagashi tools Gusta sources are from reputable makers. They exhibit the craftsmanship that is respected also in wagashi making.
Many products we sell at Gusta Supplies are exactly what we use in class -- authentic ingredients and professional-grade tools used in high end hotels and restaurants. We hope you enjoy using these products as much as our chefs favour them.
