As one of the most classic forms of anko (あんこ)—the core filling used in both wagashi (Japanese sweets) and modern Japanese treats—koshian is known for its refined mouthfeel and subtle earthy sweetness. The name “koshian” literally means “strained bean paste,” setting it apart from its chunky counterpart, tsubuan.
