In spring, blossoms of sakura is preserved classically in salt and plum vinegar, and are used for teas and in cuisine and baking. Their leaves are used in wagashi (Japanese sweets) prominently offering a floral scent. Freeze-dried from Japanese cherry blossom and leaf preserves, this powder lends your desserts and drinks a sweet-salty note with the distinct sakura aroma. The flowery pink colour comes from its natural beet derived pigments.
For your convenience, this freeze-dried powder can be mixed into both water- and fat-based mixtures, such as cream, parfait, sponge, mousse, chilled cheesecake, chocolate, or readily sprinkled on top of cakes, drinks, and plates as decorations.
Dosage: 2% to 5%
Ingredients: dextrin, sakura paste (salt-preserved cherry blossom flowers and leaves), agar, sugar, sakura extract, red beet natural colouring.
