Natural colour extracted from fruit and vegetable juice, submitted to a concentration, evaporation and filtration process. They are considered ingredients; not additives and they do not have a dosage limit. These are ultra-fine particles suspending in a continuous water/fat-phase and thus can be considered either water- or fat-soluble.
This 100% natural powder can be used without the worry of its artificial counterpart's potential health risks. Azo dyes is gradually being phased out especially in Europe, and to colour the wide range of food and beverage, plant or mineral derived alternatives are now in place.
Suggested applications: Sponge Cake, Croissant, Meringue, Macaron, Royal Icing, Chocolate Couverture, Cocoa Butter, Ice Cream, Custard, Pasta etc.
Suggested dosage to obtain the shades shown:
- Cake sponge: 20g/kg
- Croissant: 50g/kg
- Meringue: 20g/kg
- Macaron: 10g/kg
- Royal icing: 20g/kg
- Gelatin: 10g/kg

- Ice cream: 24g/kg
- Pastry cream: 24g/kg
- Pasta: 24g/kg
Directions:
- In a liquid paste, add the food colouring powder directly.
- In a thicker paste or sugar paste, dilute the powder before incorporation.
- These powder can also be used with an airbrush, in which case you need to dilute them in boiled water or food alcohol.
Colour tests at different dosages in milk and water.
