Koshian is a ready-to-use sweet red bean paste with a smooth texture. Carefully selected aduki (some say adzuki or azuki) beans are cooked until soft, their shells strained, while the starch within is further boiled with sugar into this paste texture.
Red bean paste is the default filling ("an", or "anko") for traditional and modern Japanese sweets. Translates literally to "strained filling", koshi-an is characterized for its smooth texture, in contrast to tsubu-an, which has a chunkier texture.
You can use koshian for numerous sweets application, adding a typical Japanese flavour to your chilled desserts, sponge cake, ice cream, or even spread it between butter toasts for a classic treat.
