About This Product
Unlike other whipped cream stabilizers in the market, Louis Francois Chantifix has only two ingredients: it is made of dextrose and natural sodium alginate only, and is free of animal gelatin, starch and flavouring. It has the following benefits:
- Prevents overwhipping
- Facilitates the emulsion of dairy cream and improves its mouthfeel
- Stabilizes creams in particular whipped cream, and
increases their shelf life
- Improves the lightness of whipped cream

Use: Pour the whipping cream in the bowl of the mixer. Start to whip at the lowest speed and sprinkle the adequate amount of Chantifix into the cream, then whip at a higher speed.
Observations: White-cream powder. Odourless and tasteless.

Origin: Dextrose and sodium alginate (E401) extracted from brown seaweeds
Recommended Dosage:
- Lowly textured heavy whipping cream: 20g /kg
- Textured cream: 5g /kg
