Also referred as CMC Gum, Sosa's CMC is technically named Carboxymethyl Cellulose and is often used as a thickener and/or a texture ingredient in many applications throughout the food service industry. Some in the industry also refer CMC as Tylose powder or Tylopur - which is a brand name derivative of CMC powder.
CMC acts on fondant as hardener, sugar paste and marzipan to facilitate the modeling and drying. It improves the elasticity to panic masses and is mixed with liquid to obtain food glue, suitable for cake decorations, or as protective agent to cover fruit. It may also be used as stabilizer for ready-to-bake products.
Properties: Thickening agent, anti-caking agent, hardener.
Use: Apply cold and incorporate with agitation.
Applications: Any liquid, fondant, marzipan.
Remarks: White powder. With the solids of the recipe to avoid the formation of lumps when it comes in contact with liquids. In the case of making gum paste from sugar paste, knead well, cover the dough tightly and stand for 24 hours.
Recommended Dosage: 1.5 - 2.5g /kg (or L.)
