Sosa's Proespuma Hot is a powdered aerating agent for the preparation of espumas, which lets you stabilize mousses for siphons so they keep their consistency for longer and reduces fats to go in Siphon-ready products.
For optimal use, mix the product with liquid whilst heating. Suitable for use with all liquids, it is heat-resistant and is freezable. You can use this product to hot-siphon espumas, foams and airs.
Properties: Whipping, foaming and emulsifying effect.
Use: Dissolve hot, stirring vigorously.
Application: Any liquid or semi-liquid preparation.
Elaborations: Hot foams with a siphon.
Observations: Heat to a minimum of 120°F (50°C) and a maximum of 160°F (70°C).
Recommended Dosage: 50 - 100g /kg
Suitable for vegetarians. Kosher and Halal.
