Louis Francois Vegetal, Plant Based Gelling Agent is a mix of carrageenan and tara gum, from natural vegetable ingredients that produces an elastic, firm gel stable to freeze, thawing, acidity and alcohol. Similar to agar agar, with a more elastic and less deformable texture.

Use:
- Pour the preparation and let the gel set for 24 hours (to optimize the action of the gelling agent as much as possible) even if the gel sets quickly.

Implementation at 65°C with strong stirring
- Gel starts to set at 45°C
- Thermoreversible at 60°C
Observations: White-cream to beige powder. Odourless, slightly sweet taste
Elaborations:
- Particularly suitable for milky, aqueous and alcoholic media (up to 15% alcohol, rum type).
Ingredients: Dehydrated glucose syrup, Tara gum (E417), Carrageenan (E407)
