About This Product
Soy Lecithin is a natural vegetable glycerol from soy that alleviates the union between fat molecules and water. Louis Francois powdered soy lecithin can be used as:
- Emulsifier, antioxidant
- Favour sponge cake formation through a better hydration
- Adjust fermentation of raised products
- Increase volume and conservation of finished products (delay starch regression), improves crispness
- Reduce biscuits friability (wafer)
- Instantaneous agent

Use:
Mix in cold and whip in order to introduce air. Works as soon as it is added.
Application:
- It is soluble in water.
- It is dispersible in oils and toluene.
- It is insoluble in acetone.
Observations: Light yellow to light brown powder. Typical soy smell.
Elaborations: Breads, pastry (sponge, cakes, wafers etc.), biscuits, foams, froths, ice creams, spread
Origin: Soya lecithin from plant
Recommended Dosage:
- Bakery products and biscuits: 1 - 3g /kg
- Margarine: 1 - 5g /kg
- Chocolates: 3 - 5g /kg
- Cooking: 7g /litre
Suitable for halal, vegetarians, vegans. Kosher certified.
