About This Product

The Dextrose Equivalent (DE) is the criteria that best characterizes the different functional properties of dehydrated glucose syrups.  This Louis Francois glucose powder 40DE has the following advantages:

  1. Reducing the sweetness of products: the organoleptic characteristics of many products can be improved by reducing their sweetness with glucose powder
    • If used to replace sucrose at a 1:1 ratio, it provides a lower sweetness to the products, while keeping their physical properties the same.
    • In most cases, the total dry matter shall not be reduced (milk-based desserts, biscuits, fillings, ice cream glazes), reformulating with glucose syrups gives new opportunities in this field.

  2. Can be incorporated in ice cream ready-mixes, as a partial replacement of sucrose. Therefore it has:
    • An increased firmness
    • Better extrusion
    • Longer shelf-life
    • Smaller and finer ice crystals
    • A better mouthfeel when the ice cream melts

  3. Improves the stability of foams (ex: chocolate mousse)

Use:  Add to preparation.  Don't need to premix with water, you can add it as powder to your recipe.

Observations: White and slightly hygroscopic powder.  Odourless and a slightly sweet taste.

Elaborations: Pastry, ice Cream, confectionery, chocolate etc.

Origin: Wheat or maize

Recommended Dosage:  3 - 5% of the total weight of the mix

  • Pulled Sugar: 350 g of glucose for 1 kg of sugar;
  • Ice Cream and Sorbets: 100 g of glucose for 1 liter of milk or 1 kg of fruit;
  • Nougatine: 500 g of glucose for 1 kg of sugar.

Suitable for halal, vegetarians, vegans, kosher.
