Acid-Free pectin is specially indicated for the production of dairy and fermented products. With a dosage of 0.5 - 2%, it produces, after storing, set or whipped dairy preparations with an improved consistency.
No syneresis. Thermoreversible between 40 and 60 °C. (We also carry Pectin NH Reversible)
Suitable for dairy products and those rich in calcium. Gelation of dairy products and fermented products low in fat, stabilization of creams, jellies without acid.
- Flans: 0.5 - 0.7%
- Custards: 1 - 1.2%
- Jellies: 1.5 - 2%
Directions of use: Mix with sugar and apply by stirring vigorously. Bring to boil.
