Cherry blossom bean paste, also known as sakura an (桜あん), is a traditional Japanese dessert filling made from sweet bean paste (anko) and cherry blossom leaves (sakura).
It is commonly used as a filling in sweets such as mochi, dorayaki, and manju etc. The cherry blossom leaves give the filling a delicate pink colour and a subtle floral flavour that complements the sweetness of the red bean paste.
It is a popular seasonal treat in the springtime when cherry blossoms are in bloom. Sakura bean paste is often enjoyed as part of the Japanese tradition of hanami, which involves picnicking under cherry blossom trees.
Ingredients: Hokkaido white bean paste, sugar, salt-preserved cherry blossom leaves, trehalose, natural cochineal pigment
