The original opera cake was invented in late 1800s by the world-renowned Dalloyau in celebration of the opening of the Palais Garnier in Paris. Gilded figures adorn the opera house's top corners. As such, on the rectangular cake, there is always gold as decoration. Original guideline of the cake demands that it must not be taller than 2.5 cm, and must consist of these layers -- almond joconde soaked in coffee syrup, coffee buttercream, joconde, ganache, joconde -- all topped with a thin buttercream layer and glaze. Strong coffee melds with dark chocolate ganache, creating a powerful combination of flavours.

Coffee is aromatic, caffeine laden, and bittersweet at times; so is matcha. With care and respect, we use various grades of matcha from Shogyokuen of Kyoto, replacing coffee in the joconde, the syrup, and the buttercream. We even sought a dark chocolate from Valrhona with a hint of tea aroma for the ganache, just to ensure the cake's harmonious intensity.

Please note:

  • We bake from scratch.  Please allow 2 days for us to prepare your order.
  • Please consume within 2-4 days after picking up.
  • Pick-up is available between Tuesday and Saturday, from 12PM to 6PM.  Outside of the hours, we will try to arrange special pick-up appointments if possible.
  • Pick-up is only available at Gusta Cooking Studio.  We are conveniently located near "Downtown Markham" on 14th Ave between Birchmount Rd and Warden Ave.
