Kado Ichika grew from the work of third-generation wagashi artisan Junichi Mitsubori, who established his Ichika-ryu approach in 2015 to explore wagashi as an artistic practice as well as a confectionery tradition. His nerikiri work is distinguished by highly controlled hand movements and purpose-made tools that allow remarkably subtle changes in line, contour and texture. Gusta carries Kado Ichika because these are not generic decorating tools: they are instruments developed from within the craft itself, giving serious students of wagashi access to techniques and forms that are difficult to reproduce with conventional pastry equipment.
