Cosman & Webb is a family-run organic maple farm in the Eastern Townships of southern Quebec. The family purchased the farm in 1977 and began tapping maple trees in 1986. Today, the sugar bush is cared for by a third generation of the Cosman family, producing organic maple products from the same native maple forest.
Forest stewardship has long been part of the farm’s approach. In 1995, the family purchased an adjoining parcel of sugar maples to protect it from being clear-cut. The farm has now been certified organic for more than three decades, with practices focused on protecting forest health and biodiversity while avoiding harmful toxins on maple trees and taps.
Cosman & Webb is also working to reduce the energy footprint of maple production. Since 2024, the farm has used biomass combustion, replacing conventional fossil fuels with renewable agricultural residues and responsibly sourced biomass during syrup production.
All Cosman & Webb maple syrup is produced from the family’s own maple forest and kept single-forest and unblended. Much like single-origin coffee or chocolate, this traceability allows the character of one farm, one forest, and one growing environment to remain identifiable in every bottle.
