Description
Made in Naples, Italy from pure durum wheat, Caputo Semolina Flour, known in Italian as Semola Rimacinata, is double-milled to create an exceptionally fine and uniform texture. Its signature pale golden colour, distinctive durum wheat flavour and resistant, elastic gluten make it a versatile choice for fresh and extruded pasta, rustic breads and traditional Italian baking.
With 13% protein and a flour strength of W 230–250, it produces pasta with a firm structure and satisfying al dente bite. It can be used on its own for traditional flour-and-water pasta shapes such as orecchiette and cavatelli, or blended with soft wheat flour to adjust the dough’s colour, flavour and texture. The ideal proportion will vary depending on the recipe and the desired result.
Caputo Semolina Flour is also well suited to durum wheat breads and rustic Italian-style loaves. For pizza making, its finely milled texture makes it particularly useful as a bench flour when stretching dough or lightly dusting a pizza peel, helping the dough release cleanly while contributing a subtly crisp texture to the base.
