Rosanjin 2025 is a limited-production Japanese soy sauce crafted in Yuasa, Wakayama, using carefully selected soybeans, spelt wheat and rice grown through natural cultivation without pesticides or fertilizers. Matured slowly in traditional wooden barrels, it offers a sweet, floral aroma, concentrated umami and a remarkably clean finish.

Created to honour the uncompromising culinary philosophy of Japanese artist and gastronome Kitaoji Rosanjin, this annual release is designed to enhance rather than overpower exceptional ingredients. Its refined aroma and clear, layered flavour are especially well suited to sashimi, tofu, yuba, steamed vegetables and other delicately flavoured dishes.

About the 2025 Vintage

This bottle belongs to the 2025 annual release of Rosanjin Soy Sauce. Only a limited quantity can be produced each year due to its carefully sourced ingredients and time-intensive traditional brewing process.

Rosanjin is released annually on March 23, the birthday of Kitaoji Rosanjin. At the time of release, the soy sauce has a younger and fresher character. Its flavour, aroma and colour continue to develop naturally in the bottle throughout the year, so bottles from the same vintage may show subtle differences depending on when they are enjoyed.

The term “2025 vintage” identifies the year-specific annual release. It does not mean that the soy sauce underwent several years of ageing like a vintage wine.

Naturally Cultivated Japanese Ingredients

Rosanjin is made from only four fundamental ingredients: soybeans, wheat, rice and salt. The agricultural ingredients are carefully sourced from producers committed to natural cultivation, with no pesticides or fertilizers used during growing.

  • Osode-no-Mai Soybeans
    Osode-no-Mai soybeans are naturally cultivated at Orikasa Farm in Hokkaido. Valued for their full flavour and quality, they form the savoury foundation of the soy sauce.

  • Spelt Wheat
    This ancient variety of wheat is grown at Orikasa Farm specifically for Rosanjin Soy Sauce. Spelt wheat is challenging to cultivate, and the producer developed a successful method of growing it without pesticides or fertilizers after extensive trial and error.

  • Yumepirika Rice
    Yumepirika rice is naturally cultivated at Ota Farm of Agri System in Hokkaido. The rice contributes balance and gentle sweetness to the finished soy sauce.

  • Salt from Goto-nada
    The formulation is completed with salt from the waters surrounding the Goto Islands of Nagasaki, selected to complement the naturally cultivated grains and soybeans.

Eight Months in Traditional Wooden Barrels

While many modern soy sauces are produced more quickly with controlled heating, Rosanjin is matured with patience in traditional wooden barrels. Skilled brewers carefully oversee the fermentation and allow it to develop for approximately eight months.

The original formulation was created with ingredient proportions associated with Japanese light soy sauce, reflecting Rosanjin’s preference for the lighter style used in Kansai cuisine. However, the extended wooden-barrel maturation gradually deepens its colour and develops an unusually high concentration of umami.

A Soy Sauce Beyond Conventional Categories

Rosanjin does not fit neatly into a conventional soy sauce category. Its ingredient proportions resemble light soy sauce, its colour develops toward that of dark soy sauce, and its measured umami reportedly reaches beyond levels typically associated with tamari.

The first impression is one of gentle natural sweetness, followed by concentrated savouriness and clean saltiness. The saltiness fades quickly rather than lingering on the palate, leaving a clear finish without heaviness or distracting flavours.

Flavour and Aroma Profile

Upon opening the bottle, Rosanjin releases a sweet and floral soy aroma. Its flavour is concentrated yet precise, combining gentle sweetness, deep umami and balanced saltiness with an exceptionally clean finish.

Although full in flavour, it is not intended to dominate the food. Instead, its aroma and savouriness help bring forward the natural qualities of the accompanying ingredient, making it particularly effective with foods that are mild, fresh or delicately seasoned.

Recommended Uses

  • Sashimi and Sushi
    Serve with white fish, sea bream, scallops and other delicate seafood. Use sparingly so the soy sauce supports the sweetness and texture of the fish without masking it.

  • Tofu, Yuba and Vegetables
    Pair with chilled tofu, fresh yuba, steamed vegetables and simply prepared seasonal produce. These mild ingredients allow the sauce’s floral aroma and refined umami to remain noticeable.

  • Rice and Finishing Applications
    Use as a finishing soy sauce for freshly cooked rice, lightly grilled seafood, steamed dishes and simple dipping sauces. It is best reserved for applications where its distinctive aroma and clean flavour can be fully appreciated.

Storage and Vintage Development

Store in a cool, dry place away from direct sunlight. Refrigerate after opening, keep the bottle tightly closed and use as soon as reasonably possible for the best aroma and flavour.

Natural changes in colour, aroma and flavour may occur as the unopened soy sauce continues to develop within its annual release. These gradual differences are a characteristic of the product rather than an indication of reduced quality.
