Description

Warabiko (わらび粉) is the traditional starch used to prepare Warabi Mochi (蕨餅), a beloved Japanese confection known for its translucent, chewy, and delicately sweet texture.

While warabi refers to a type of edible bracken fern (fiddlehead), the starch is derived from its roots and known for producing a soft, slightly elastic gel when heated with water. Authentic hon-warabi-ko (本わらび粉) is made from 100% bracken root starch and is extremely rare and expensive due to the labor-intensive extraction process.

This high-quality warabiko contains a small percentage of true warabi starch (hon-warabi-ko), along with lotus root starch and processed starch, offering a more accessible way to recreate the authentic flavour and mouthfeel of traditional warabi mochi. When prepared, the result is a smooth, translucent jelly that pairs beautifully with kinako (roasted soybean flour) and kuromitsu (black sugar syrup).

Ingredients: lotus root starch, true warabi starch, processed starch

Very good product and shopping experience

Very excited to get the warabiko from Gusta, can’t find anywhere in Toronto. The customer service is amazing. They contacted me before shipping because the one I ordered was the last one in stock, and just let me wait for a few more days to get the new shipment coming in stock.
