Amarena cherries are the fruit of the Prunus cerasus tree which originated in Asia Minor and were brought to Italy by the Roman General Lucullus. The sour cherry is a variety of cherry with a tart, refreshing flavour. A summer fruit which is picked in July, high in vitamins A, B1, and C.

Toschi, founded in 1945 in Vignola, Modena, by Giancarlo and Lanfranco Toschi, began by preserving Vignola cherries in alcohol. In 1952, they introduced Cherry Brandy, followed by a collaboration with Ferrari in 1953. By 1960, they expanded to syrups and Amarena cherries. In 2016, Toschi opened a U.S. branch to boost sales of products like liqueurs, candied Amarena, and Balsamic Vinegar of Modena PGI. Today, Toschi continues producing sour cherries for desserts, cocktails, and more.
