Kōgyoku, commonly known in English as the Jonathan apple, is a Japanese-grown apple valued for its deep red skin, pronounced acidity, balanced sweetness and rich aroma. Its dense, firm flesh performs especially well in pastry and cooked preparations, where a more assertive apple flavour is needed.
Why TAKA Jonathan Apple Purée?
Part of TAKA’s Sakura Series, this purée is made with Japanese-grown Jonathan apples and retains fruit pulp for a more natural, textured finish than a completely smooth apple purée. The frozen apples are thawed at a low temperature before being rapidly heated and cooled, helping preserve their fresh, aromatic character. Its clearly identified variety and Japanese provenance distinguish it from purées made with unspecified blended apples.
Flavour and Applications
This textured purée captures Jonathan apple’s fragrant, sweet-tart profile, with enough acidity to remain expressive alongside cream, caramel and warm spices.
Use it in mousses, entremets, tart fillings, compotes, cakes, doughnuts and plated desserts, or prepare sorbets, gelato and frozen parfaits. The fruit pulp also brings character to smoothies, cocktails, sparkling apple drinks, vinaigrettes and sauces for pork or duck. Jonathan apple pairs especially well with caramel, maple, cinnamon, vanilla, almond, walnut, miso and ginger.
