Description
Hyuganatsu is a distinctive Japanese summer citrus discovered in Miyazaki during the early nineteenth century. Also marketed as New Summer Orange — and called Konatsu in parts of Japan — it offers a less familiar alternative to lemon, grapefruit and conventional orange purées. Its exact parentage is unknown, although the variety is believed to have some connection to yuzu.
Why TAKA Hyuganatsu Purée?
TAKA produces this Sakura Series purée with Hyuganatsu grown in Miyazaki Prefecture, the fruit’s historic home. By focusing on a named Japanese citrus and its established growing region, the purée provides an authentic flavour that cannot be reproduced simply by blending standard citrus juices. It is particularly useful for chefs seeking a recognizable Japanese ingredient beyond yuzu.
Flavour and Applications
Hyuganatsu has a refreshing, aromatic flavour with pronounced acidity, restrained sweetness and characteristics reminiscent of grapefruit and lemon. Its distinctive citrus intensity works especially well in preparations that need freshness and definition.
Use it in curds, crémeux, mousses, ganaches, marmalades, glazes and plated desserts, or prepare sorbets, granitas and frozen parfaits. It also brings a refined Japanese citrus note to cocktails, mocktails, sodas, teas, vinaigrettes and sauces for meat or seafood. Hyuganatsu pairs beautifully with white chocolate, vanilla, honey, ginger, shiso, basil, jasmine tea, strawberry and raspberry.
