Description
Kyoho is a premium Japanese grape variety celebrated for its exceptionally large berries, purple-black skin, abundant juice and powerful fragrance. Developed in Japan in 1937, it combines pronounced sweetness with gentle acidity, producing a fuller and more aromatic profile than ordinary grape varieties.
Why TAKA Kyoho Purée?
This frozen purée belongs to TAKA’s Sakura Series, a collection created to showcase carefully selected Japanese fruits and vegetables with particular attention to variety and provenance. Japanese-grown Kyoho grapes are individually removed from their bunches, frozen, thawed at a low temperature and processed using rapid heating and cooling to retain their fresh fruit character. This varietal-specific sourcing and careful processing distinguish it from conventional grape purées and artificially flavoured “Kyoho” products.
Flavour and Applications
The purée has a deep purple colour and crushed-fruit texture, with Kyoho’s characteristic fragrance, concentrated sweetness and soft acidity. It offers the rounded grape and dark-berry character associated with the fresh Japanese fruit.
Use it in mousses, crémeux, jellies, pâte de fruit, entremets, tart fillings and plated desserts, or create distinctive sorbets, granitas, gelato and frozen parfaits. Its aromatic profile also works beautifully in cocktails, mocktails, smoothies, sparkling drinks and sauces. Kyoho grape pairs particularly well with yuzu, lemon, shiso, jasmine tea, elderflower, peach, pear, yogurt, mascarpone and dark chocolate.
