SOL FRESH Freeze-Dried Lime Powder is made from 100% lime pulp, also referred to as lime meat, and finely milled into a free-flowing powder. It has a light green to pale yellow colour, a clean citrus aroma, and the sharp, sour flavour characteristic of fresh lime. Its bright acidity makes it especially useful for adding lift, balance, and freshness to sweet, savoury, and beverage applications.

Use & Application
Lime powder is best suited to applications where a sharp citrus flavour is needed without adding juice. Use it in icings, glazes, buttercream, curds, confectionery, drink mixes, cocktail and mocktail rims, seasoning blends, marinades, dressings, and sauces. It is particularly practical in dry mixes or low-moisture recipes where fresh lime juice would affect texture or shelf life. Start with a small amount and adjust gradually, as the sour citrus profile can be quite direct.

Each 10g of freeze-dried lime powder is equivalent to approximately 100g of fresh lime pulp.

Why Freeze-Dried?
Fresh lime is valued for its lively acidity and aromatic citrus character, both of which can be difficult to preserve through heat-based drying. Freeze-drying removes moisture at low temperature, helping capture the lime pulp’s sour flavour, fresh aroma, and natural pale citrus colour in a stable powder form. It gives chefs and bakers a convenient way to add lime character without extra liquid, while keeping the ingredient pure and free from additives, preservatives, carriers, maltodextrin, or added sugar.
