MERA SHOKUHIN Frozen Japanese Yuzu Juice – Unsalted, 1 kg

Mera Shokuhin 米良食品

$85.75

Bring the distinctive fragrance of Japanese yuzu to pastries, beverages and savoury recipes with this frozen yuzu juice from Mera Shokuhin. Made with yuzu grown in Miyazaki and Kumamoto prefectures on Japan’s Kyushu island, it delivers lively acidity and a complex citrus aroma with notes reminiscent of mandarin, grapefruit and lemon.

This yuzu juice contains no added salt, making it versatile for both sweet and savoury applications. The convenient 1 kg resealable pouch is well suited to professional kitchens, bakeries, cafés, restaurants and cocktail programs where fresh Japanese yuzu can be difficult to source consistently.

Flavour Profile

Yuzu is prized for its intensely aromatic character and layered citrus flavour. Compared with conventional lemon or lime juice, it offers a more floral fragrance, bright acidity and a gently bitter finish that adds complexity without requiring a large quantity.

Recommended Applications

  • Pastry and Desserts
Use in yuzu curd, mousse, crémeux, ganache, glaze, jelly, cheesecake, sorbet, gelato, granita and frozen desserts. Its pronounced aroma also works well in whipped cream, buttercream and chocolate preparations.

  • Beverages
Add to cocktails, mocktails, sparkling drinks, soda, tea, lemonade, syrups and other specialty beverages. Begin with a small amount and adjust gradually, as yuzu has a concentrated aroma and noticeable acidity.

  • Savoury Cooking
Suitable for ponzu-style sauces, vinaigrettes, marinades, dipping sauces, seafood dishes and dressings. The unsalted format allows the seasoning level to be adjusted separately for each recipe.

How to Use

Thaw the required quantity under refrigeration before use. Mix or gently shake the pouch if natural separation has occurred. Add gradually according to the desired level of acidity and yuzu aroma.

Avoid repeatedly thawing and refreezing the product. After opening, keep frozen and use as soon as possible.
